Menu Ideas

Memorial Day is a day when most people celebrate the end of spring and the beginning of summer. The basic celebration revolves around barbeque, desserts and alcoholic beverages. Alcoholic beverages are alright for some people, but should only be used in moderation.

We all know about the warnings regarding drinking and driving. If you are going to drive, don’t drink, and if you are going to drink, then let someone else be responsible for driving. And, not everyone has a high tolerance for alcohol. Since I fit into the latter category, I have some other suggestions. Additionally, I have specific menu ideas that should please everyone on your guest list.

Let’s start with the meat. While most people will opt for barbequed ribs, I suggest chicken, hot dogs, brats, or burgers, especially turkey burgers. Grilled fish is another delicious alternative to consider. Following are my original recipes for barbequed chicken and grilled turkey burgers.

Eve’s Honey Barbeque Chicken

5 – 8 lbs. chicken parts (wings or drumsticks)

Or 5 – 8 lbs ribbed chicken breasts

cooking spray

2 cups barbeque sauce

1 cup honey

grilled chicken seasoning or garlic powder (to taste)

salt (to taste)

Keep chicken frozen until ready to cook. Wash chicken under cool running water. Completely line an oblong pan with foil. Saturate with cooking spray. Mix together barbeque sauce, honey, and spices. Thoroughly baste chicken with honey-barbeque mixture, and bake at 450 degrees F for 1 hour. Turn chicken and re-baste. Bake for another hour or until thoroughly brown and done. Serves 12 to 15.

Eve’s Millineum Burgers

4 lbs ground turkey (fresh or thawed)

3 bx Vegetable Soup mix

1 cup Worcestershire sauce

2 large tomatoes (sliced)

6 to 8 whole, large lettuce leaves (optional)

2 md Spanish onions (sliced)

ketchup

mustard

whole pickles or relish

In large bowl combine ground turkey, soup mix and Worcestershire sauce. Shape into patties (1/2 inch thick). Grill, approx 15 minutes per side. Remove from grill. Layer burgers with remaining ingredients (to suit individual tastes), Yield 6 to 8 burgers.

Serving suggestion #1: Compliment burgers with potato chips (place both barbeque and ranch flavored chips together in a large bowl, toss lightly).

Serving suggestion #2: Compliment burgers and chips with Grape soda.

Next up, we’ll do the sides. My selection for great sides include, green beans, corn on the cob, potato salad, and green salad. Following are my original recipes for the beans, and the potato and green salads.

Herbed Green Beans

2 cups water

2 lbs. smoked or regular turkey ham

2 tsp salt

4 tbs herbed-seasoned oil

2 32 oz bg frozen green beans

2 cups shredded carrots

crushed red pepper (to taste)

a sprinkle of thyme (optional)

In a large pot, bring first three ingredients to a boil. Add green beans to boiling water mixture. Add remaining ingredients (except thyme) to beans after first boil. Cook until mixture comes to a second boil or until beans are tender-crisp and most water is absorbed. (Do not overcook). Thyme may be added during last five minutes of cooking time, if desired.

Eve’ s Potato Salad

1 lg bx scalloped potatoes (regular flavor)

1 md yellow onion (chopped)

1 md green pepper (chopped)

2 cups mayo

1 cup mustard

Parsley flakes (to taste)

Bake potatoes according to package directions in large casserole, set aside. Meanwhile, place onions and peppers in medium saucepan with just enough water to cover. Bring to a boil, drain, add to cooked potatoes. Add mayo and mustard, blending well. Sprinkle with parsley flakes. Let cool completely, and chill in refrigerator.

Simple Summer Salad

2 md bgs prepared lettuce leaves

2 pints cherry tomatoes

1 small bag garlic-flavored croutons

lite Italian dressing (to taste)

Place all ingredients in a large bowl. Toss well.

For the corn, I just follow the package directions which are usually very simple. Generally, place 8 to 12 ears in a large saucepan with just enough water to cover. Let boil for approx 2 hours, stirring occasionally. Add 3 tbsp margarine or vegetable oil for last 10 minutes of cooking time. Drain excess juice and serve hot.

What would a Memorial Day menu be without the dessert? Since its almost summer, most people will probably opt for ice cream. If your guests want ice cream, I have a delicious Banana Split recipe. The recipe only serves two, but by all means feel free to make adjustments to treat additional guests. Eve’s Banana Split

2 bananas (halved, lengthwise or across)

4 scoops Vanilla ice cream

chocolate syrup

whipped cream

10 marachino cherries or blueberries

walnut chips

Place bananas in 2 individual serving bowls. Scoop the ice cream into the center. Drizzle syrup over each scoop. Dollop or spray the whipped cream over the syrup. Top with 5 cherries or blueberries each. Finish with a sprinkle of walnut chips. Serves 2.

Tropical Fruit Salad w/ Pineapple Dressing

Salad

1 bunch/ea red and green seedless grapes

4 mangoes (peeled and sliced)

5 kiwi fruit (peeled and sliced)

32 oz maraschino cherries (drained)

32 oz pineapple chunks (drained)

Dressing

1 sm can pineapple juice (unsweetened)

½ cup honey

In a large bowl combine all salad ingredients. Toss lightly with a large spoon. Mix the pineapple and honey together, blending well. Pour over salad and serve chilled. Yields approx 12 1 cup servings. Um-um, guaranteed to make your taste buds sing!

And now for the drinks. As alternatives to alcohol, my suggestions include, red or white bubbly, grape soda, cream soda, fruit punch, cool aid, lemonade or iced tea. These refreshing drinks should enhance any meal and make it special.
