Fabulous Pot Luck Supper Ideas

I have had many people ask me for pot luck supper ideas. Our church has a lot of pot luck suppers so I am always on the lookout for something to bring to the pot luck supper that would be a crowd pleaser. So what kind of pot luck supper ideas have I discovered? I have a lot of pot luck supper ideas but for the sake of brevity, will share just a few of them here.

Main Meal Pot Luck Supper Ideas:

Pulled Pork – EASY

Purchase the cheapest piece of pork you can find. I use the shoulder. Whenever it goes on sale for .99 a pound or less I buy one and freeze it for just this occasion.

Best Pulled Pork Ever

½ c. apple cider vinegar

½ c. apple juice

Salt/Pepper

Crock Pot

Rub pork w/salt and pepper to taste. Put into crock pot. Add apple cider and apple juice. Cover and cook on high for 6 hours or on low for 8 hours. Drain and let pork cool. Once cool use your hands to remove the fat and bone shredding the pork back into the crock pot. (I use my fingers.) Add 2-4 bottles of B.B.Q. sauce and mix well. You want it to be moist, not wet. Heat on low in crock pot and serve.

Baked Chicken and Rice

2 lbs of assorted chicken pieces

1 cup rice

1 can cream of anything soup

1 can water

1 can or green beans or peas with the water

Pre-heat oven to 350 degrees. Grease a roasting pan. In a small bowl mix cream soup (I use cream of mushroom) and 1 can of water. Sprinkle rice over bottom of roasting pan. Add soup and vegetables with the can’s water. Place chicken pieces on top. Salt/pepper to taste. Cover w/foil and cook 350 degrees for 1 hour.

Side Dish Pot Luck Supper Ideas:

Fresh Green Beans

1 lb. fresh green beans, trimmed

¼ tsp. garlic powder

2-3 green onions, sliced

1 stalk of chopped celery

1 TBLS. olive oil

1 TBLS. butter

2 TBLS. lemon or lime juice

Salt/pepper to taste.

¼ c. sliced almonds (optional)

In a 2 quart microwavable bowl, place green beans and 2 TBLS. water. Cover and cook on high for 5 minutes. Half way through stir beans and add celery. Recover and continue to cook. Transfer to a strainer. Rinse with cold water to stop beans from continuing to cook. Drain well. Add green beans and celery to a server platter. Sprinkle with garlic powder, salt and pepper. In small saucepan melt butter in olive oil. Remove from heat. Add lemon or lime juice. Stir. Pour over green beans and toss well to coat. Top with sliced almonds if you wish and/or lime or lemon slices for garnish. Serve a room temperature.

Yummy Cold Taco Salad – always a favorite

1 head of lettuce ripped to bite sized pieces

Salad fixings such as tomatoes, celery, olives, peppers, radishes, etc. – of your choice

1 small can of chili beans, drained well

1- 12 oz. package of shredded cheddar cheese or taco flavored cheese

1- 16 oz. bag of Taco chips or Dorito style chips

1 bottle of Italian style dressing

Mix everything together except the chips and dressing. Add chips and dressing right before serving and toss.

As much as I love desserts, I don’t do desserts for pot luck. I have always found that desserts are usually plentiful at a pot luck supper.
